Fit Friday: No Bake Lemon Coconut Protein Bars | Newport Mesa Moms

Who doesn’t have a sweet tooth?  Who doesn’t watch what they put in their mouths?  And, who has time to make healthy, sweet snacks when life is all about being on the go?  Well, I found this recipe for No-Bake Lemon Coconut Protein Bars that has become my go-to when I crave sweets, and hopefully it will become a staple in your house.  It’s such a simple recipe, and you can enjoy these bars as a sweet treat or in conjunction with a workout.  The combination of protein and healthy fats will keep you thoroughly satisfied.

I love it even more because it’s a healthy, protein-packed, no-bake treat that I can make in just minutes.  It’s a win-win!

You Will Need:

1/2 cup coconut (or vanilla) protein powder

1/2 cup melted coconut oil

3/4 cup unsweetened shredded coconut

2 Tablespoons honey

2 Tablespoons lemon juice + zest to taste (I zested about 1/3 of a lemon)

2 Tablespoons coconut flour

 

Directions:

Combine ingredients in a mixing bowl.  Line a small baking dish with parchment paper.

Spread batter inside, using a spatula to flatten.

Refrigerate for 45 minutes.  Cut into 12 bars and serve immediately.  Enjoy!!
